Help I've never done the blog thing, before so sorry it this is in the wrong spot. I was wondering if when using Keifer and villi if one would need to cook a raw milk source or can I just dump it in the jar like I have been doing with the paster. and homog. milks. Thanks

Hello Jane,
We're just getting started with this new blog on the website, so hang in there with us! Kefir and Viili have been made for several hundred years using all kinds of milks. Some cultures are a little more touchy with different kinds of milk or when switching from one milk source to another. You should be okay switching to a new milk source. If you use raw milk, make sure it is from a safe, reputable, and legal source. As a general rule, save an extra starter set aside incase your particular culture does not "like" the switch. With Villi, use a starter in your new milk as if your were starting a fresh batch anyway. With the kefir, you may want to rinse the grains in cold water before converting.

There is no need to heat the milk unless the milk has unsafe bacteria. Many who are in to probiotic foods recomend using pasturized or homoganized milk for their cultures. Reason being that raw milk will "sour" but will turn to different product. If pasturized milk goes bad it doesn't sour, it GOES BAD. It STINKS! The advantage is that if something is wrong with your cultured product from pasturized milk, you will know it right away before you eat it because it will smell off.

Some people prefer to culture their dead milk into a live food, and save raw milk for drinking since it is already live. Others believe that if you culutre raw milk it will give you twice the advantage. I have not found scientific evidence to support this, but I do favor live foods as a whole. The idea of using raw milk is very touchy right now with a lot of people, including the Government.
